Green Curry Chicken (Gaeng Keow Wan Gai)

Background Info: Green Curry Chicken is one of the most famous dishes in Thai cuisine. It features tender chicken simmered in a rich, and spicy green curry sauce made from fresh herbs and coconut milk.

Ingredients:

  • 400ml coconut milk
  • 2 tbsp green curry paste
  • 300g chicken breast/thigh (sliced)
  • 100g Thai eggplant (or regular eggplant, cubed)
  • 1 red chili (sliced)
  • 2 kaffir lime leaves (torn)
  • 1 tbsp fish sauce
  • 1 tsp palm sugar (or brown sugar)
  • Handful of Thai basil leaves

Instructions:

Heat 1/2 coconut milk in a pan until oil splits (5 min). Stir in green curry paste and cook until fragrant. Add chicken, coat with paste, cook 3 min. Pour in remaining coconut milk, add eggplants and lime leaves, simmer 8–10 min. Season with fish sauce and sugar. Stir in basil leaves and sliced chili before serving.
