Pad Thai - Noodles

Background Info: Pad Thai is one of the most famous and delicious widely known dishes from Thai cuisine, known worldwide for its perfect balance of flavors—sweet, sour, salty, and savory—all in one colorful plate.

  • 200g rice noodles (soaked in warm water 30 min)
  • 2 tbsp vegetable oil
  • 2 cloves garlic (minced)
  • 150g shrimp, chicken, or tofu
  • 2 eggs
  • 100g bean sprouts
  • 3 spring onions (cut into 2-inch lengths)
  • 3 tbsp crushed roasted peanuts
  • 1 lime (cut into wedges)

Sauce

  • 3 tbsp fish sauce
  • 1 tbsp tamarind paste
  • 1.5 tbsp palm sugar (or brown sugar)
  • 1 tsp chili flakes (optional)

Instructions

Mix all sauce ingredients and set aside. Heat oil in a wok on medium-high. Add garlic and protein, stir-fry until cooked. Push protein to the side, scramble eggs in the pan. Drain noodles, add them to the pan, pour sauce over and toss well. Stir in bean sprouts and spring onions quickly. Serve with peanuts, lime wedges, and optional extra chili.
