Latkes

Background Info: Latkes are crispy potato pancakes traditionally eaten by Jews during Hanukkah. They are one of the most iconic Jewish holiday foods and are loved for their crisp edges, tender centers, and deep symbolic meaning. (Eat them with applesauce.)

Ingredients:

  • 4 medium russet potatoes (peeled)
  • 1 small onion
  • 2 large eggs
  • 1/4 cup flour (or matzoh meal)
  • 1 tsp salt
  • 1/4 tsp black pepper
  • Vegetable oil (for frying)
  • Applesauce/Sour cream (For Serving)

Instructions:

Grate potatoes and onion (by hand or food processor). Squeeze out excess liquid using cheesecloth or a clean kitchen towel. In a bowl, combine grated mix with eggs, flour, salt, and pepper. Heat 1/4 inch oil in skillet over medium-high heat. Spoon 2–3 tbsp batter per latke into pan, flatten gently. Fry until golden (~3–4 min per side). Drain on paper towels. Serve hot with sour cream and/or applesauce.
